Chablis isn't sweet at all. It's a dry white wine made with the Chardonnay grape grown within the region of Chablis. It is a crisp Chardonnay, with a flint or steel minerality with high acidity.
A subtle, light-as-air and elegant wine that reveals its qualities slowly over the course of a bottle. The aromas are wonderful and quite pronounced: notably lemon custard, honeysuckle, tea and baked bread. The palate reveals a bit of depth, but is harmonious. Easy to drink, never fatiguing the palate.

The Chablis region is the northernmost wine district of the Burgundy region in France. The cool climate of this region produces wines with more acidity and flavors less fruity than Chardonnay wines grown in warmer climates.
What the difference is between Chablis and other Chardonnay wine, then the main difference is that Chablis are 95% unwooded. As a result, they are lighter than many other Chardonnays and pair better with lighter, less rich food. ... Chardonnay is a grape variety.
The Chablis Appellation d'origine contrôlée is required to use Chardonnay grapes solely. The grapevines around the town of Chablis make a dry white wine renowned for the purity of its aroma and taste. In comparison with the white wines from the rest of Burgundy, Chablis wine has typically much less influence of oak.
